Entomophagy (aka eating insects)

Grade Level: Grade k – 12

People have been eating insects for a long time, with some archeological evidence indicating that humans evolved as an entomophagous species (Dobermann et al, 2017). Recently, eating insects has sparked the culinary curiosity of Canadians as we explore ways to decrease the ecological footprint of our food choices while maintaining a high quality, nutritious diet. In this workshop, our undergraduate students will introduce the concept of entomophagy, discuss the ecological and nutritional benefits associated with eating insects, and prepare delicious insect-based snacks with your students.
